Super Easy Energy Bites
For when you fancy a sweet treat without the guilt!
Ingredients - Makes approximately 20 bites
◦ 1 cup - Oats
◦ 1 tbls - Chia Seeds/milled chia seeds
◦ 1 tbls - Flax seeds/Flax seed powder
◦ 2 tbls - Seeds (I used sunflower seeds but you can use any mix of seeds you like)
◦ 2 tbls - Flaked Almonds
◦ 5 tbls - Cacao nibs
◦ 2 tbls - Coconut flakes
◦ 4 tbls - Maple Syrup (I used the 0 cal version from the Protein Works)
◦ 1/2 cup - Nut butter (I used crunchy peanut butter but any works)
◦ 2 tbls - Raisins or sultanas
Method
1. Blend together all the dry ingredients. I recommend using a food processor to grind the ingredients but you can also do this by hand if you don't have a food processor. If you do this by hand the bits may come out a slightly different texture but will still be delicious
2. Add the wet ingredients and blend again
3. Mix in raisins/sultanas
4. Make into ball shapes. I use a tablespoon to measure out the bits so they are roughly equal then rolled them in my hand
5. They can be enjoyed straight away or I sometimes leave them to chill in the fridge for about 30 mins as I like them cold! Store them in an airtight container and consume within 3 days (If they last that long!)
